Spinach and Garlic Scape Pesto


3 cups packed fresh spinach leaves

1/2 cup parsley leaves

2/3 cup grated parmesan cheese

1/2 cup walnuts

6-8 chopped garlic scapes

2 Tbsp basil (optional)

1 cup extra virgin olive oil


1. Place all ingredients in a blender or food processor (in 1 or 2 batches depending on your set up). Drizzle in the oil once the other ingredients are broken down. Process until smooth.
