Tomato and Mozzarella Skewers with Basil Oil

Ingredients

Cherry (or grape) tomatoes

Bocconcini (bite sized mozzarella balls)

Fresh basil

Olive oil

Salt and pepper to taste

Instructions

1. This is basically a Caprese salad on a stick. You can substitute bocconcini for regular mozzarella cut into chunks. On each skewer do a piece of cheese for every 3 tomatoes.

2. Blend a handful of basil with enough olive oil to make it fluid and creamy.

3. Toss the saucy mixture over the skewers, season with salt and pepper.
