07 Mar Roasted Beets with Horseradish Dipping Sauce
4-6 medium-sized beets
1 part horseradish
3-4 parts sour cream
Salt and pepper
1. Preheat the oven to 350F.
2. Wash the beets.
3. Wrap the beets in foil and roast in the oven for approximately 1 hour (this depends on the size of the beets).
4. Remove the beets from the oven when roasted and tender throughout. Rub the skins off of the beats and cut the beets into bite-size pieces (not too small).
5. To make the dipping sauce, simply mix sauce ingredients together in a small bowl. Enjoy!
